Recipe: Festive Christmas cookies

A fun tradition to do together with your little ones is baking homemade Christmas cookies. It's not only delightful to eat, but it also makes your house smell wonderful! Because these Christmas cookies are so easy to bake, it's a lot of fun to do it together with your kids. Dip them in a cup of hot cocoa and enjoy a fun Christmas movie together on the couch.

Equipments:

All you need is a bowl, a mixer, a rolling pin, baking paper, and cookie cutters. Use fun cookie cutters, such as a gingerbread person or a Christmas tree. Of course, you can use any shape you like.

Ingredients

    • 125 grams of unsalted butter at room temperature

    • 90 grams of light brown sugar

    • 230 grams of honey

    • 375 grams of flour

    • 1 teaspoon of baking soda

    • 2 tablespoons of gingerbread spices

    • 1 teaspoon of cinnamon

    • 100 grams of dark chocolate drops (small chocolate balls available in the supermarket)

    • Mixing bowl, mixer, rolling pin, baking paper, cookie cutters (gingerbread person or Christmas tree shapes are suggested)

Instructions:

For these gingerbread cookies, there's a relatively large amount of honey. This can't be directly replaced with sugar, so if you prefer not to use honey, you can choose to use maple syrup instead. Otherwise, it will change the entire taste of the recipe.

Place the butter and sugar in the mixer bowl and beat for 10-12 minutes until it becomes white and creamy. Scrape the sides of the bowl, add the honey, flour, baking soda, gingerbread spices, and cinnamon. Beat until you have a smooth dough.

If the dough is too soft or sticky to roll out, you can refrigerate it until it becomes firmer. Add the chocolate to the dough.

Preheat the oven to 160˚C.

Line 2 baking sheets with baking paper. Dust the countertop with some flour and roll out the dough. Cut out the cookies and place them on the baking sheets. Leave some space between the cookies so they can spread a bit. Bake for 10-12 minutes or until they are golden brown.

The cookies will only harden as they cool, so give them some time before removing them from the baking sheet.
